Fuji Oil’s “MIRA-Dashi”: A Plant-Based Innovation Showcased at Expo 2025 Osaka
At the Expo 2025 Osaka "Feast" Pavilion, Fuji Oil and ORA Youth Division introduced a chilled tonkotsu-style ramen made entirely from plant-based ingredients. The creamy white soup, made with soy milk and powered by Fuji Oil’s MIRACORE® technology, replicates the richness and flavor of pork bone broth without using any animal products. It remains smooth even when cold, and was a major hit among international food professionals.
MIRA-Dashi® is a next-generation plant-based dashi product developed using Fuji Oil’s MIRACORE® platform. It mimics the umami of chicken, beef, pork bone, bonito, and shellfish broths without animal-derived ingredients or artificial flavors. The lineup includes:
- Chicken-style
- Beef-style
- Paitan (pork bone-style)
- Bonito-style
- Shellfish-style
These are widely adopted in professional kitchens across Japan, from ramen shops to hotels.
In July 2025, Fuji Oil launched MIRA-Dashi C820P, a powdered white paitan-style dashi. It enables room-temperature storage and easier transport, removing previous hurdles like cold-chain logistics. This format unlocks global potential, especially in regions where refrigerated distribution is costly.
MIRA-Dashi’s 100% plant-based formulation makes it ideal for halal, kosher, vegetarian, and vegan diets. President Tatsushi Omori describes plant-based ingredients as “the global common denominator,” enabling truly inclusive dining experiences. MIRA-Dashi supports menus that anyone can enjoy—regardless of religion or dietary restrictions.
