Hikari Miso Promotes Food Waste Reduction with “Naka-Ochi Miso” — Showcasing Organic and Upcycled Products at Aeon Stores Nationwide
Hikari Miso is participating in the Aeon Group’s nationwide sustainability fair “Erabou. Mirai ni Tsunagaru Ima wo” from May 30 to June 1, held at approximately 6,200 stores. The company is presenting a variety of organic and upcycled products that align with sustainable values.
Key featured items include Organic JAS-certified miso and instant organic miso soup. At select stores, Hikari Miso staff will be present to directly communicate the importance of organic foods and environmental responsibility to shoppers.
A standout highlight is “Naka-Ochi Miso”, an upcycled product created by blending leftover miso collected from production tanks and pipes. Though these remnants are typically discarded, they are fully flavorful and safe to eat. This initiative helps reduce food loss by repurposing usable ingredients. While only one store carried it last year, six stores will sell it this year, complete with in-store tastings and affordable pricing.
In addition, Hikari Miso, Fundokin Shoyu, and Aeon Agri Create have contributed organic ingredients to develop an organic grilled rice ball, manufactured by Nichirei Foods, further reinforcing the company's commitment to a sustainable food future.
